Quick lunch for mum

I managed to whip up a very tasty lunch for myself today whilst I was home alone with the babies. Trying to create something that is satisfying, healthy and creative can seem such a challenge right now, so I was quite pleased with this super easy, very much thrown together meal.
This took me all of ten seconds to make and tasted divine! I spread Philadelphia cream cheese onto two slices of Ryvita and placed a hearty amount of smoked salmon on top. Then I simply seasoned the salmon with some course black pepper. Yum!
I had this with a little tub of trail mixed nuts, seeds and dried fruits and a pint of water.
